For those of you who make your own almond milk;

What do you do with your leftover almond mush?

I made my own almond milk for the first time yesterday (and my was it was easy+fun!), and made cookies with the leftover almond goosh. But, seeing as both my girlfriend and I love this almond milk, we'll probably be making it quite often, and one would get sick of the same almond cookies all the time. :P

So I'm looking for more ideas on what to do with the leftovers, and wondering what other almond milk'ers out there do with theirs. :)

When I saw your post title and your picture, I assumed you'd already figured out what to do with the almond mush, and had made it into cookies. Could you do that?

I think that's what the OP did (made cookies), but also thought that making cookies with the leftovers every time the milk is made would get old.

I have a ratty, too, but I'm wary of giving her too many nuts because of the fat content. :)

yeah, i definitely wouldn't give them too much. i make almond milk once in a blue moon, i'm too lazy. most of the time they get my leftover spinach and carrot ends and the like.

can you share the recipe you used to make cookies out of the leftover mush? thanks!

*nervous laugh* WELL, as written in my main journal, the cookies were made up on the spot, and turned out like half cookies/half cakes. A combo that was actually quite wonderful! I can give you rounded measurements (as I try and remember) but don't hold me to it because I pretty much just chucked a bunch of stuff into a bowl and mixed. (Who says baking is a science?!)

2 cups flour
1 ts. baking powder
1/2 ts. salt
3/4 cup sugar
3/4 - 1 cup butter (I used nuttelex)
1 egg replacer
1 ts. vanilla
1/3 c. almond mush
1 ts. almond essence if you've got it

Preheat oven (350F)
Sift dry ingredients.
Mix sugar/butter in separate bowl.
Add egg replacer+almond mush to sugar/butter.
Mix wet with dry til well combined.
Shape. Press whole almond on top.
Bake.
(I baked mine for 40mins but my oven is shot'd)

I always hear about people making nut cheese. Maybe you could use the mush for that? Also, it's supposed to make a fabulous face scrub.

I tend to bake with the leftover almond meal, too. Besides cookies, I've thrown it into muffins, dessert breads, put it in oatmeal/other hot cereal, etc. Basically, I just use it as flour. I've been trying to find more "raw" things to do with it though, like throw it in a thick smoothie or bean dip/hummus type of thing.

i have sixteen mice, a rat, and chickens, anything that would otherwise not have a use goes to them, though you could try making other baked things..not just cookies...
or next time you make chocolate, dump it in the chocolate, with coconut...yuuummm

Besides mentioning cookies, Colleen Patrick-Goudreau in The Joy of Vegan Baking recommends mixing the leftover mush with rice or sautéed vegetables.
